Proteins are large molecules made from amino acid. During protein synthesis, a sequence of three DNA or mRNA nucleotides (that are usually denoted with the nitrogenous bases of the nucleotides) correspond to different amino acids. These sequence of three are called codons which eventually code for different amino acids and the amino acid sequence, on its own, forms proteins. Different amino acid sequence forms different proteins thus leading to phenotypic variation of our protein as said in the question
