Why might a professional (paid) army be less effective than a volunteer army?

A paid army is essentially "Do what we want and you'll get money" whereas a volunteer army is more of a "If you believe in our cause and want to fight for it and your freedoms, join us and defend your home from invaders.

Voluntary military is better because armies are only justified when they defend the country from imminent outside threat. Paid armies are easily abused as the drafted ones. They hire people in peace time, train them, and lock them to wars they never wanted to fight. If they are able to leave when such wars broke out, the country would never get into those wars.
