Over Easy Eggs:

Cooking: After the egg is cracked into the pan, it's cooked until the whites are set on the bottom. Then, it's carefully flipped to cook the other side briefly.

Yolk Consistency: The yolk remains runny and liquidy (yum my favorite).

Whites: Fully cooked but tender.

Over Medium Eggs:

These are cooked longer than over easy eggs. After flipping, they're left on the second side for a longer period.

Yolk Consistency: The yolk is partially set but still a bit runny in the center.

Whites: Fully cooked and slightly firmer than over easy eggs.
