Why should pointed surfaces be avoided when using high voltage electrical equipment

Answer:

Voltage more readily escapes from sharply rounded surfaces because the "charge density" is more concentrated there.

Lightning rods are sharply pointed for this reason.

The purpose of a lightning rod is to allow charge density (accumulating on surfaces below - earth, etc.) to escape into the atmosphere thus reducing probability of a lightning strike at that point.
