What are simple sentences

A simple sentence is a sentence with one one clause, one subject and one predicate. It does NOT have two phases (such as because I like you, I called you) but this does include sentences where those parts are expressed by multiple words such as "Maria and Michel eat burgers" where "Maria and Michel" is the subject.
