What was control of the Caribbean Sea important to Spain?

Most likely because it gave them a way to transport goods and themselves giving them a disadvantage in wars or invades.

Why does anyone want control of the sea? It gave them a huge advantage over any enemy coming through the water, generally they could stop them before they even got close.
