What tells the body how much sugar should be in the blood?

I believe your pancreas does.

The pancreas organ (you have only one) produces insulin chemical to offset the rise in sugar in your blood. If you have high sugar diet, candy, soda, alcohol, sweets, high carb, your blood sugar will go up.
