Hello there!

How were helots
different from slaves?

Honestly, helots and slaves are the same thing based off my knowledge.

Both were non-free men and were both owned by a "Lord"

As far as I can remember. Helots, Could become artisan or tradesman (but so could slaves), However they were also considered vital people in the spartan community, they served Spartans and were some times aloud to fight in battle or aid wounded.

I really hope this helps.
