How is the streak test used to identify minerals?

You take a mineral and a ceramic plate and pull the mineral across the surface of the ceramic plate. This leaves a powder residue from the mineral. The color of the powder left from rubbing the mineral on the plate, the "streak", is used to identify a mineral in combination of a chart telling you what color corresponds to what.
