Oil is more moveable and can be used on canvas, it also takes longer to dry, acrylic paint is not as moveable and can be used on canvas, it dries very quickly, Water color, when dry is like a chalk but when water touches it it turns into a watery version of that color, it is moveable and takes a medium amount of time to dry, it is used mostly on watercolor paper

Acrylic is also usable on canvas, glass or wood With acrylic paints, the binder is acrylic polymer and the extender is water. whereas Watercolor can only be (properly) done on paper.

Hope this helps!
