Why is it important that meiosis divides twice?

Meiosis is important because it ensures that all organisms produced via sexual reproduction contain the correct number of chromosomes. Meiosis also produces variation by way of the process of recombination.

Recombination- Recombination during Meiosis is facilitated by chromosomal crossover. The crossover process leads to offspring having different combinations of genes from those of their parents and can occasionally produce new chimeric alleles.
