Why does mineral water that has “trickled through mountains for centuries” go out of date next year?

In the case of bottled water, it's not the water that has an expiration date but the bottle itself.

After a period of time, influenced by the amount of sunlight exposure, the plastic bottles encasing the trickled through mountains water will begin leaching chemicals into that delicious water.

Use a reusable recycled water bottle. :)
