It has been said that consuming large amounts of sugar causes a peak in glucose levels followed by a dip as large as the peak. is this true or false?

The statement is true. This phenomenon is called reactive hypoglycemia, or more commonly known as sugar crash. This is due to abnormal levels of blood glucose after consuming a large amount of sugar. This causes rapid insulin secretion, thus, rapid glucose uptake by the tissues. The sudden fall of glucose in the blood causes the sugar crash, which can be described as a feeling of lethargy or tiredness.
