The organic compounds that scientist use to cut, copy, and move segments of DNA are enzymes.

Explanation:

During the process related to DNA, the organic compound which is used in the process is called as enzymes. For each steps in the process, enzymes are employed. In order to cut the DNA into small pieces, a enzyme called restriction enzymes are used.

For copying the required DNA sequence, polymerase is used and to join the segmented DNA into a single strand DNA, ligase is used. All the three organic compounds used in the process are nothing but enzymes.
