Baking powder doesn't actually react with the air itself. When baking powder is heated up, it decomposes to release carbon dioxide.

NaHCO3 + heat ==> Na2CO3 + CO2 + H2O

In balanced form it's 2NaHCO3 --> Na2CO3 + CO2+ H2O.
