Explanation:

2x - 2y + 5z - 2x - y + 3z

first, group the same variables together.

2x - 2x - 2y - y + 5z + 3z

then, this step which I don't have a name for.

2x - 2x = 0x.

-2y - y = -3y

5z + 3z = 8z

0x - 3y + 8z

or, -3y + 8z
