Because this is necessary for the data to be valid. If you are testing one variable but the conditions of the control and experimental are different besides that variable, you will have more than one variable and will not be able to tell if the results of the experiment are caused by the variable you were trying to test.
(Sorry for repeating the word variable so much, lol)
