Why is crop rotation beneficial for maintaining an appropriate nutrient supply

Some plants absorb all the nutrients in the soil, like the cotton plant, and some return them to the soil, like peanuts. The latter plants are called nitrogen-fixing plants. Rotating these and the former plants (like cotton), replenishes the nutrients in the soil and creates a healthy agricultural cycle.
