What happens when you apply moist heat to sugar?

According to what i read this can happen. : When simple sugars such as sucrose (or table sugar) are heated, they melt and break down into glucose and fructose! And they are two other forms of sugar. Continuing to heat the sugar at high temperatures makes and causes these sugars to lose water and react with each other making many different types of compounds.
