Cut celery can be placed in a bowl of water until crisp. Carrots – cut a little off the bottom of the carrot (not stem end) and place upright in a glass of water until crisp. When the cells are full of water, they grow large and are packed closely together, making the carrot turgid. Conversely, when the cells lose water, they shrink and the carrot shrivels.
