How would the value of the atomic mass of the metal calculated (unknown metal) be affected if the hot metal sample cooled off before it was transferred to the water in the calorimeter? Would it be too high or too low?

Answer:

A smaller temperature change for our water will give a smaller specific heat value for the metal, which consequently will lead to a higher (too high) atomic mass.
