Boiled means heated enough to be giving off steam in bubbles, or cooked in water or water-based sauce that's boiling. Simmered means heated to be just barely boiling, or cooked in water or the like that's just barely boiling. Stewed means cooked in hot water for a long time, so as to soften tough ingredients.
