The official language of the Ottoman Empire as set by the Young Turks was (Ottoman) Turkish. The Ottoman Empire encompassed today's Turkey, so obviously the language spoken there is going to be Turkish. The Turkish language belongs to the group of Turkic languages, along with Kazakh, Uzbek, and 30ish other languages, some of which are extinct today.
