What do spanish people put on graves to bribe evil spirits away?

I believe the answer is: Food
In Spanish culture, there is an inherent belief that the spirit of the dead could very much influence the fortune of the living. Putting food on the graves is believed to be perceived by the dead as a form of respect/peace offering and able to prevent the evil spirit from causing the misfortune.
