A polypeptide consists of two ends, an N terminal called the amino terminal and an other C terminal called the carboxyl terminal.

Carboxypeptidase is a protease enzyme that cleaves the peptide bond at the C terminal of an amino acid while aminopeptidase cleaves the peptide bond at the N terminal.

Answer: The two differ based on where they cleave the protein being digested. The amino peptidase cleaves the protein from the amino terminus while the carboxypeptidase cleaves the protein from the carboxy terminus.

I hope it helps, Regards.
