After chewing, the food bolus passes through the pharynx and is directed to the esophagus. There, peristaltic movements allow the cake to be directed to the stomach. The esophagus is a tube about 25cm long. Because of the friction of the bolus on its surface, it is lined with stratified epithelium. To lessen this friction, the epithelium is lubricated by mucus produced by the submucosa esophageal glands. Between the esophagus and the stomach is the gastroesophageal sphincter that prevents the reflux of gastric contents into the esophagus.
