The sentence that shows the correct use of an "em dash" is the sentence "I just watched The Lord of the Rings—my favorite film trilogy—with my friends."

Em dashes are used to to provide emphasis to a statement. Em dashes are placed right after the noun phrase they modify and inmediatly after the end of the phrase. In this case, the phrase "my favorite film trilogy" uses em dashes correctly.
