Why would I use an em dash instead of a comma to punctuate nonessential information?

Answer:

Dashes are used exactly like commas to indicate non-essential information sometimes. (that can be taken away without affecting the meaning of a sentence.) If you have one dash, you need the other dash, I hope I helped you. ^^
