Limestone is often used as dimension stone and also as crushed stone. if a mining company wishes to establish a new limestone quarry, what type of depositional environment should they look for in the rock record?

First they should look for a sedimentary sequence like is common in the Front Ranges of the Rockies, then they should probably look for a shallow sea type of environment of formation. Such an environment would be amenable to the formation of carbonates like limestone and most likely would have fossils in it which would be attractive for dimension stone for counter tops, etc.
