Which structure of the brain is most responsible for acting as a relay station to sort and send incoming signals to the cerebral cortex?

The hypothalamus does this through the pituitary gland. Using a number of small nuclei it uses these nuclei to stimulate or block the creation of pitutiary hormones which help control hunger, temperature as well as ones sleep, and other daily rhythms.
