An example of two commonly exploited fungal species are Sacchromyces cervisiae and Streptococcus thermophilus.
Sacchromyces cervisiae is mainly used for bread production. Sacchromyces cervisiae is a yeast and as such is very active metabolically. Through its metabolism, produces
CO_(2) from the fermentation of the cereal's sugars to alcohol which makes bread rise.
Streptococcus thermophilus are important on the yogurt industry. These bacteria ferment lactose (milk's sugar) producing lactic acid turning milk into yogurt.
