Many fitness and nutrition experts suggest using a journal to keep track of exercise and food intake. How can using a journal help someone become more fit or change body composition?

It makes you more aware, especially with food. Often we don't know how much we eat until we write it all out (with calories, fat, protein, carbs, and whatnot). It's a way of self-monitoring. When you track your exercise it can be more of a motivator, to see your progress, what you're working out, your muscle development etc.

Yes keeping a food diary or journal is very accommodating to become more fit or change body composition. It can help you see models to what, when and why you eat. It can also be a deterrent to overeating because you don’t want to write down that you overate something. It keeps you responsible. If you are a results man there are many available online websites and apps for following your food and venture each day that are fast and simple to use.
