Pork is that special type of food that we need to prepare with certain guidelines. In doing so we reduce the risk of infections and illness. The infections caused by eating pork comes from the parasite Trichinella spiralis, which causes trichinosis. Before 2011, the standard in cooking pork was 160° F (71° C). However, in 2011, the United States Department of Agriculture (USDA) updated this recommendation to 145°F (63°C).
