When you insert your thermometer be placed into the thickest part of the cornish game hen thigh and it will read 74°C then the hen is cooked or when you pierce the thigh and the juices run clear. A big hen will be cooked at 205°C for 35 - 40 minutes and a smaller hen will take 25 - 30 minutes.
