To avoid trichinosis, pork should never be under cooked. Depending on the type of pork, the required range shoulda t least be 145°F - 160°F. However, in New York city health code requires pork to be cooked to a minimum temperature of 155°F. Additionally, a resting period of 3 minutes is allowed before consuming the cooked meat.
