I think the correct term would be denatured. When a protein has lost its shape due to a factor in the environment breaking the weak chemical bonds and interactions, that protein has been denatured. It involves the destruction of the secondary and the tertiary structure of the proteins. However, this process do not break peptide bonds and thus the primary structure of the protein would still remain.
