When designing a pot handle, which combination of variables (material, length, duration of time handle can last without becoming too hot) would you choose as an engineer? (in relativity to conduction)

A less conductive material, such as coiled metal or a hard plastic.
A medium sized handle, about 10" 11"

A medium sized handle, about 10"-11"
With this length, it would take longer to warm up.
