Why christians can't pray to Roman gods

I suppose they could, but then they would not be Christians. The Christians believe that God is the one true God. They believe that God is the Father, the Son, and the Holy Spirit, but the Father, Son, and the Spirit are not the same.
They are two very distinct religions and if one were to practise the other they would no longer be of the previous religion.

Christians don't pray to gods, Christians pray to one God. So, praying to statues or multiple gods goes against the religion.
