This is in my own words:

Pretérito means is a single event in past tense and its something that was completed. Example, Yo hice comida Mexicana.
Imperfecto means described repeated actions in past tense. Example, Yo hacia comida Mexicana.

The preterite expresses an action in the past that is defined. An Imperfect preterite expresses an action in the past that is NOT defined.
