What advantage would there be for an organism to be able to turn on or off particular genes in response to certain conditions?

Answer:

Adapting to the surrounding/environment by turning on/off particular genes could be very both beneficial and disadvantageous. A big disadvantage could be that the organism mis using up a lot of energy and materials to produce a protein that is no longer needed. On the other hand, if you have the arabinose sugar present, the growth can be beneficial towards the sugar source.
