Heating and/or agitation of egg whites results in:

Egg whites are made out of the protein albumen in eggs. Albumen is normally soluble that is why the egg whites retain its liquid form. Heating or agitation of the egg whites leads to the denatures the albumen which makes it less soluble and eventually solid.
