The respiration of stored commodities can be monitored by measuring the loss of dry matter. In contrast, fresh weight loss is not a good indicator of the rate of respiration. During extended storage periods at warm temperatures the loss of dry matter can be substantial. Water loss is the primary cause of fresh weight loss and it is much more sensitive to changes in relative humidity around the commodity than to the rate of respiration.
