The lettuce was crisper at the store because it was constantly sprayed with water. The distilled water, with which the the lettuce was sprayed passed through the semi permeable membrane of the plant and enter into the plant cells. This makes made the cells to be turgid and also made the plant to appear crisper. The lettuce looked less crisp at home because it was no longer sprayed with water and instead it is losing water from its cells to the environment.
