Why is soap used to remove grease

It works because soap is made up of molecules with two very different ends.

Soap breaks up the oil (grease) into smaller drops, which can mix with the water. This is why we use soap to clean grease because it break it apart causing it to wash off object clean. Hope this help!!!:)
