The Jewish people study the Talmud and Hebrew Bible, because it is part of their religion, and they do what their religion tells them to.

This question can be compared to one like: "Why do people wake up after a nap?" It is natural for the Jewish people to do, because it is ingrained into their society and culture, and is their norm.

hope this helps
