An enzyme secreted by the gastric mucosa of a newborn that assists in the digestion of milk proteins is rennin.
This coagulating enzyme occurres in the gastric juice of the calf and rennin is primarily associated with the coagulation of milk. This enzymeRennin is present in the our body in its inactive form called prorennin, but when we consume milk, it immediately reacts with the hydrochloric acid produced in our stomachs.
