In cellular membranes why do the tail ends of the lipid molecules face toward each other

Because phospholipid fatty acid tails are hydrophobic whereas the phosphate heads are hydrophilic. Hence, the fatty acid tails face inwards, away from water and phosphate heads naturally do the opposite, facing towards water.
