Ferdinand and miranda fall in love at first sight; prospero says, "they have changed eyes." why does this seem feasible, given the emotional state of the two young people?

This is feasible in light of the fact that this is the only man Miranda has come in contact with other than her dad and Caliban so it is reasonable that she would experience passionate feelings for him. Ferdinand presumably began to love Miranda in light of the fact that she was exceptional and he was never able to have somebody like her at his country, also given his emotional state of mind due to the loss of his father (as he knows it).
