Proteolytic enzymes are produced in their inactive precursor so that they don't digest the cells that secrete them. Exposure of their active sites allow the enzyme to become activated and function to catalyze reactions. An example is pepsinogen produced in the stomach to breakdown proteins into shorter polypeptide chains. The enzyme is activated by hydrochloric acid into pepsin.
