How did the American Indians use the bison they hunted

Native Americans serves as the caretaker of business so their forced movement towards bison free reservation areas was challenging..Sone tribes ask the government officials is they could hunt cattle the way they hunted buffalo,,So that might've use it for food or clothing etc..
